Herring marinated in oil with sun-dried tomatoes and Dijon mustard makes for an impressive yet easy-to-prepare snack. It's an excellent choice for finger foods, and I've found a few ideas on how to serve it at a party.

What kind of herring should you use for the snack?

For ease, use herring fillets marinated in oil. Unlike brined fillets, they don't require soaking. Just rinse them once or twice under running water, and they're ready to use.

If you have brined fillets, you can still use them, but you'll need to allow an extra day to soak the herring.

Can you prepare herring with sun-dried tomatoes just before the party?

It's not ideal. Although the snack will be edible, the flavours won't have melded. It's best to prepare the herring with sun-dried tomatoes a day in advance and refrigerate them to develop the flavors. This way, you'll have time to focus on other preparations before the party.

5 ideas for serving herring as finger foods

Idea 1. Mini sandwiches – use crispy baguette or dark bread, cut into triangles. Spread cream cheese on the slices, add a piece of herring, a slice of onion, and a tomato from the marinade. Garnish with fresh parsley.

Idea 2. Mini tarts – make tartlets from shortcrust pastry and fill them with herring salad. Sprinkle with chopped chives.

Idea 3. Herring on sun-dried tomatoes on crackers or toast – spread cottage cheese mixed with chives or herbs on the crackers, then top with herring pieces and garnish.

Idea 4. Herring in cups – serve the mini snack in wine or martini glasses. Layer the ingredients, and garnish with capers.

Idea 5. Mini skewers with herring – thread pieces of herring, tomatoes, and onions onto toothpicks. You can also add black or green olives.

How to make herring with sun-dried tomatoes?

Ingredients:

  • 8 herring fillets in oil,
  • 1 onion,
  • 60g Dijon mustard,
  • 100g sun-dried tomatoes in oil,
  • freshly ground pepper, 3 allspice berries,
  • 1 tablespoon apple cider vinegar,
  • 60ml olive oil or rapeseed oil.

Recipe for marinated herring with sun-dried tomatoes:

  1. Rinse the herring fillets under running water and cut them into pieces about 5cm long.
  2. Peel the onion and slice it into wedges. Both white and red onions are suitable for this snack.
  3. In a bowl or jar, mix olive oil, 2 tablespoons of oil from the sun-dried tomatoes, apple cider vinegar, Dijon mustard, onion and sun-dried tomatoes cut into smaller pieces.
  4. Add the herring, mix again, and refrigerate for at least 12 hours.
