The dessert is often the highlight of a communion reception. While cakes are commonly served, they are not the only option. Other sweets, particularly those that are white, are well-suited for this occasion. An ideal choice for this time of year would be a no-bake cheesecake. It is refined and can be easily prepared at home.
Opt for bucket cheese
No-bake cheesecake is the quintessential spring and summer dessert. It's considered a seasonal delight because it tastes best on warm days and pairs well with fruits such as strawberries, raspberries, or blueberries.
Using bucket quark is perfect for this preparation, making the process much simpler. Like a traditional baked cheesecake, it requires much less work. There are no lumps, and the cheese mixture will be silky smooth.
What to look out for when choosing cheese?
The mixture made from bucket cheese is more delicate in taste and less dense than cheese that requires grinding. It's advisable to use cheese that has already proved successful in other baked goods. It should possess a firm, dense consistency that prevents it from slipping off the spoon. A good indicator is the absence of lumps and floating whey. Additionally, pay attention to the ingredients - they should be limited, without starch, dyes, or thickeners, and also sugar-free. It's better to sweeten the mixture to your own preference.
Cheesecake with or without a base
You can create the base for the cheesecake with simple sponge cakes. If you opt for those with chocolate and jelly, it will influence the flavour. Ground biscuits mixed with melted butter serve as an excellent alternative.
Another option is a cheesecake without any base. The dessert will still be stable, allowing you to concentrate solely on preparing the cheese mixture. To intensify and enrich the flavour, it’s worth adding double cream and white chocolate to the cheese.
No-bake cheesecake perfect for communion
This recipe doesn't include gelatine. The cheesecake sets due to jellies, and I recommend lemon ones as they impart a pleasant aftertaste. Delicate jellies, known as transparent, are also a good choice. The pristine white of the cheesecake will attract attention, but you can serve it with fresh fruits. Ideally, these should be finely chopped strawberries with mint. Such a refreshing dessert will surely be a hit with guests.
Ingredients:
- 1 kilogram bucket quark for cheesecake,
- 3 packets of jelly and 350 millilitres of boiling water,
- 200 millilitres double cream 30%,
- icing sugar to taste (optional),
- 300 grams high-quality white chocolate,
- teaspoon vanilla paste (optional).
For the base:
- 150 grams biscuits,
- 50 grams melted butter.
Method of preparation:
- Place the biscuits and butter in a food processor and blend until the biscuits are finely crushed. Line a cake pan with the mixture, ensuring it has the consistency of wet sand.
- Melt the chocolate using a double boiler and set aside to cool.
- Transfer the jellies to a container and pour boiling water over them. Stir until dissolved and set aside.
- Whip the double cream until stiff, adding icing sugar towards the end.
- Add the thickened jelly, bucket cheese, and melted white chocolate to the whipped cream, along with the vanilla paste (optional). Blend the mixture thoroughly until smooth.
- Spread the cheese mixture over the prepared base. Smooth the top.
- Chill the cheesecake in the refrigerator for several hours, preferably covered, to prevent it from absorbing other smells in the fridge.
