Caviar lime, also known as citrus caviar, is an Australian fruit that has recently gained popularity worldwide. Its pulp, reminiscent of caviar, is delightful with its refreshing citrus taste and aroma. In addition to its spectacular appearance and flavour, this fruit impresses with its nutritional properties.

Citrus australasica is a plant with a thorny structure, sometimes forming into a small tree, naturally found in the subtropical and tropical regions of Western Australia. Its cylindrical fruits, resembling cucumbers in shape, can come in various colours, most commonly green or purple. For a long time, they were appreciated by the indigenous people of Australia, who used them for culinary and medicinal purposes.

European settlers did not show the same interest and cut it down extensively. At the beginning of the 21st century, caviar lime began to gain popularity on the menus of European and American restaurants. Its cultivation was also expanded to other regions of the world. The pulp of these fruits, composed of spherical, juicy beads resembling caviar, serves as a valuable and aesthetic decoration for a variety of sweet and savoury dishes. In taste, caviar lime is similar to lime.

However, caviar lime is not only a tasty and beautiful decoration. As befits a citrus fruit, it is rich in vitamin C, which is crucial for the proper functioning of the immune system. This fruit also contains other essential minerals, such as phosphorus, calcium, and magnesium, necessary for strong bones and teeth and the proper functioning of the nervous system.
