Eggs are the heroes of many breakfasts. Sometimes they turn into scrambled eggs; other times, they serve as the base for omelettes or pancakes. Hard-boiled, they can become a delectable sandwich spread, superbly replacing other spreads. Although there are countless ideas for preparing it, the addition of cheddar cheese will quickly win hearts, becoming a breakfast favourite.

Egg paste with cheddar cheese

Eggs and cheddar cheese make a wonderful duo on sandwiches. Preparation takes just fifteen minutes, and it disappears off the plate even faster. All you need is fresh bread and nothing more for bliss.

Egg paste with cheddar cheese tastes better than the usual. You can choose the type of cheese according to your preferences. Mild cheeses such as Emmentaler or Gouda work well, but sharper cheddar or Mimolette also shine.

Ingredients:

  • 3,5 ounces of your favourite cheddar cheese,
  • 3 eggs,
  • 1 flat tablespoon of mayonnaise,
  • 1 tablespoon of natural yoghurt,
  • 1 teaspoon of mustard,
  • chopped chives,
  • 2 cloves of garlic,
  • salt and pepper to taste.

Preparation:

                  
  1. Place the eggs in a saucepan, cover with water and hard-boil them. Once cooked, cool, peel, and dice or grate them. You can also mash them with a fork for a creamier paste.
  2. Grate the cheddar cheese.
  3. Transfer the diced eggs to a bowl. Add mayonnaise, yoghurt, mustard, chopped chives, and mix well.
  4. Season to taste with salt and pepper.

The egg paste with cheddar cheese is ready to eat immediately after preparation. You can also add a pinch of chilli flakes if you like a more pronounced flavour. It pairs beautifully with fresh rolls, baguettes, bagels, or slices of good bread. Alternatively, use it for a breakfast tortilla. For an appetiser version, fill savoury tart shells with the paste or wrap it with a slice of ham to make rolls. Enjoy!
