Chicken reimagined: Elevate your dinner with parmesan delight
Chicken fillets need not become monotonous cutlets on the plate. With just a few simple additions, they can become delightful once again.
Juicy chicken, sweet cherry tomatoes, and a crispy Parmesan topping offer a simple yet impressive dinner. This dish requires minimal preparation and looks splendid on the plate, making it suitable for special occasions as well.
Chicken with Parmesan topping
Say goodbye to ordinary cutlets; this dish will outshine them with its flavour. An aromatic layer of sautéed sweet cherry tomatoes enriched with garlic and onion, tender and juicy chicken breast, and a crispy Parmesan crumble with parsley – it's a dish even a fine restaurant wouldn’t be embarrassed to serve.
Ingredients:
- 2 chicken fillets,
- 1 tablespoon olive oil,
- 1 small onion,
- 2 cloves of garlic,
- 250 g cherry tomatoes,
- 60 ml white wine,
- 2 tablespoons chopped fresh basil,
- Salt and freshly ground black pepper to taste.
Parmesan topping:
- 50 g freshly grated Parmesan,
- 30 g bread crumbs,
- 1 tablespoon chopped fresh parsley,
- 1 tablespoon melted butter or olive oil.
Preparation method:
- Lightly pound the chicken fillets, then season with salt and pepper.
- Sauté them in an ovenproof skillet until browned, then remove.
- Add the chopped onion to the same skillet and cook until it becomes soft and translucent. Add more olive oil if needed.
- Add the minced garlic and cook for another minute, being cautious not to let it burn.
- Add the halved cherry tomatoes to the skillet. Cook, stirring, until they begin to release their juice and soften slightly.
- Pour in the white wine and cook until most of the liquid evaporates. You can skip this step if you prefer not to use wine.
- Add the chopped basil, seasoning with salt and pepper.
- Place the chicken fillets on top of the tomato layer in the skillet.
- In a small bowl, mix the grated Parmesan, bread crumbs, and chopped parsley.
- Drizzle with melted butter or olive oil and mix to combine the ingredients.
- Evenly sprinkle the prepared topping over the chicken fillets.
- Place the skillet in an oven preheated to 200 degrees Celsius and bake for about 20-25 minutes, until the chicken is fully cooked and the topping is golden and crispy.
- Serve the hot chicken directly from the skillet, garnished with fresh parsley or basil.
