This cake can effortlessly take the place of a classic cake, and it’s not complicated to prepare. It requires some time, but it’s definitely worth the effort to create such a splendid dessert.

The name suits this cake perfectly — it’s chocolatey and incredibly delicious, making you feel as if you're in a sweet paradise. It’s an indulgent dessert, but a little sweet pleasure now and then certainly won't hurt.

Ingredients:

Chocolate sponge:

  • 7 eggs
  • 135 g sugar
  • 3 tablespoons plain flour
  • 2 tablespoons potato flour
  • 2 tablespoons cocoa
  • 1 teaspoon baking powder

Nut meringue:

  • 6 egg whites
  • 300 g ground walnuts
  • 180 g sugar
  • 1 teaspoon honey
  • 1 teaspoon plain flour
  • 1 tablespoon potato flour

Custard cream:

  • 6 egg yolks
  • 100 g sugar
  • 1 vanilla sugar
  • 10 g plain flour
  • 55 g potato flour
  • 1 pint milk
  • 4 tablespoons spirit
  • 250 g butter

Glaze:

  • caramel mass or melted chocolate

Additionally:

  • 100 g almonds

Preparation method:

  1. Begin with the sponge. Whisk the egg whites with the sugar until stiff, then add the yolks and gently mix.
  2. Add the sifted plain flour, potato flour, cocoa, and baking powder to the eggs, and mix gently until smooth.
  3. Pour the mixture into a cake tin or tray lined with baking paper. Bake in an oven preheated to 340°F (170°C) for about 30 minutes, until a skewer comes out clean.
  4. Prepare the meringue. Whisk the egg whites until stiff with the sugar. Add the remaining ingredients and mix.
  5. Bake in the same tin as the sponge at 355°F (180°C) for about 30-40 minutes.
  6. Cream the yolks with the sugars, add the flours, and a little milk.
  7. Boil the remaining milk, add the prepared mixture, and heat until a thick custard forms.
  8. After cooling, beat the custard with the butter until smooth.
  9. Layer the sponge with cream, then the nut meringue, and cream again. Drizzle with caramel and sprinkle with nuts.
