I love sweet breakfasts and could eat them all the time. Recently, I discovered a particular recipe that got me hooked. The cinnamon roll omelette was precisely what I needed. Not only did it keep me satisfied for hours, but it also tasted like a fluffy cheesecake.

Lately, I've been pondering what to make for breakfast for the family. I wanted something different from the classic egg salad sandwiches, pancakes, or waffles. I had eggs and yoghurt in the fridge, so I decided to combine them. I added a few more ingredients, and the result? A delicious and satisfying omelette with skyr. I couldn't even serve it properly before it disappeared. In fact, my daughter tried to take my portion from the plate. The cinnamon roll omelette will now be a regular feature at our breakfast gatherings.

The skyr omelette is more satisfying than many breakfasts

It's worth asking: why is that? It won't surprise anyone when I say it's about protein. That's the ingredient with the highest content here. You'll find it in the eggs and yoghurt. The cinnamon roll omelette has a sweet taste and a fluffy texture (it really tastes like cheesecake), and in my opinion, it's a great choice when trying to reduce snacking. Although it's quite calorie-dense, you won't feel the need to snack later. The skyr omelette can be made very quickly, and the list of ingredients is as follows.

Ingredients:

  • 150g vanilla skyr (I also recommend the salted caramel flavour),
  • 2 eggs,
  • 40g flour,
  • half a teaspoon of butter,
  • sugar or sweetener,
  • half a teaspoon of cinnamon,
  • olive oil or cooking oil for frying.

Preparation:

The recipe for the cinnamon roll omelette is a quick and easy way to make a nutritious breakfast or snack — you can prepare it in a few minutes, and the ingredients are easily available. Yoghurt provides a solid dose of protein, and the cinnamon butter gives it a distinct taste. Here's the step-by-step recipe:

  1. Place the skyr and eggs in a bowl. Mix with a whisk or hand mixer until you have a uniform batter. You can also use a blender.
  2. Add flour and baking powder to the mixture. Mix thoroughly again. Note: if the batter is too thick and resembles a dense pudding, I recommend adding a little milk or plant-based drink.
  3. In a small bowl, melt the butter with sugar and cinnamon — pop it in the microwave for about 20-30 seconds, and that's all you need.
  4. Heat a pan and pour in some oil. Don't overdo it with the amount. If you have spray olive oil, perfect; if not, a single drop will suffice.
  5. Spread it across the entire pan.
  6. Pour the batter onto the well-heated oil and smooth the surface. Cook the skyr omelette on low heat for about 3 minutes — it will start to rise and beautifully brown. At this point, make patterns with cinnamon sugar and butter. That's why this dish is called a cinnamon roll omelette.
  7. Flip your breakfast with a silicone spatula (do this carefully, as the batter is delicate) and cook for another two minutes.
  8. Fruits or maple syrup complement the omelette well. I served it with peanut butter.
