Ingredients:

  • 1 rice paper,
  • half a hothouse cucumber,
  • 140 grams cooked and peeled prawns,
  • half an avocado,
  • 1 tablespoon mayonnaise,
  • 1 tablespoon soy sauce,
  • 1 teaspoon sriracha sauce,
  • juice of half a lime.

Additions:

  • sesame seeds,
  • avocado,
  • chilli pepper.

Preparation Method:

Step 1. Cut the rice paper into smaller triangles, using scissors for ease. Toss them into hot oil and fry briefly until they turn into a white, crispy chip.

Step 2. Finely dice the cucumber, cooked prawns, and avocado and transfer them to a large bowl.

Step 3. Add the mayonnaise, soy sauce, and sriracha sauce and mix thoroughly. You can adjust the amount of sriracha sauce to your preferred level of spiciness. Alternatively, you can substitute classic mayonnaise with a lighter version.

Step 4. Place the prepared mixture on the crispy rice paper chips and arrange avocado pieces on top. Drizzle with lime juice, add sliced chilli peppers (optional), and sprinkle with sesame seeds. Enjoy!
