How to prepare the chocolate cake – step by step:
- Beat the eggs with sugar into a light, fluffy mixture.
- Add milk and continue mixing on a low speed.
- Sift flour, cocoa, and baking powder into a separate bowl and gradually add to the egg mixture.
- Mix everything thoroughly to achieve a uniform batter.
- Pour the batter into a mould (25×30 cm frame) and bake at 175°C for about 20 minutes.
- After baking, cool and cut into two equal layers.
- Saturate the layers with cooled instant coffee (about 150 ml of prepared coffee).
Preparation of the cheese filling:
- Mix the cheese with vanilla sugar, lemon juice, and milk – use a mixer to make the mixture perfectly smooth.
- In a separate bowl, whip the double cream until stiff.
- Gently combine the whipped cream with the cheese mixture.
- Prepare the gelatin fix according to the package instructions, cool it, and mix it with the mixture.
- Add sugar and mix everything briefly once again.
- Divide the mixture into two equal parts.
- Spread the first part on the bottom cake layer and refrigerate for about 20 minutes to set.
Preparation of the chocolate layer:
- Heat the double cream in a saucepan (do not bring to a boil).
- Place the bowl over a pot of boiling water (double boiler), add butter and broken pieces of chocolate.
- Stir until the mixture is uniform and glossy.
- Pour half the chocolate glaze over the chilled cheese filling and put everything back in the fridge for 20 minutes.
- Then, spread the second part of the cheese filling, cover it with the second cake layer, and pour the rest of the chocolate glaze.
- Store the finished cake in the fridge overnight so all layers beautifully combine and set.
