Fancy fluffy, aromatic pancakes but keen to avoid frying? I have an excellent solution for you! Say goodbye to traditional frying on the stove—it's time to embrace a new, innovative method of preparing this beloved dish.

Why bake pancakes?

Baking pancakes in the oven offers numerous benefits:

- Healthier: Since oven-baked pancakes aren't fried in fat, they're lower in calories and healthier.

Easier: Baking pancakes in the oven is simpler and less messy than frying them on the hob. There's no need to deal with splattering fat or worry about the pancakes burning.

- Fluffier: The finished pancakes come out fluffy and tender, perfect for piling on your favourite toppings like fruit, maple syrup, or whipped cream.

- Quick: Mixing up the batter is swift, and the baking takes around 25 minutes.

Recipe for Oven-Baked Pancakes

Ingredients:

- 450g of all-purpose flour,
- Approximately 240ml of milk,
- 4 tablespoons of sugar,
- 1 egg,
- 28g of fresh yeast,
- A pinch of salt,
- 1 apple,
- 1 pear,
- A bit of oil,
- Powdered sugar for dusting.

Creating baked pancakes is incredibly straightforward. Combine the ingredients in a bowl, allow the dough to rise, and then dollop it onto a baking sheet lined with parchment paper. Bake the pancakes in an oven preheated to 180°C for about 25 minutes. Once done, dust the pancakes with powdered sugar and enjoy with your favourite toppings.

Additional Tips:

- Feel free to swap the apples and pears for other fruits in the dough, such as bananas, blueberries, or strawberries.
- Dried fruits, like cranberries or raisins, can also be a great addition.
- For an extra burst of flavour, sprinkle a pinch of cinnamon or cardamom into the dough.

- If you prefer pancakes with a bit more crunch, give them a quick pan-fry after baking.
