Mardi Gras King Cake – what type of cake is it and what is its tradition?

Mardi Gras King Cake, also referred to as the Epiphany Cake, is a unique pastry that has graced tables during celebrations on 6th January for centuries. The tradition of baking it dates back to the Middle Ages and is especially popular in French-speaking countries and the southern United States, particularly in New Orleans. It symbolises the homage paid by the three wise men to the newborn Jesus.

A distinctive feature of the King Cake is its crown-like shape, adorned with colourful icing in shades of purple, green, and gold, representing justice, faith, and power. Inside the cake, a small figurine – often in the shape of a baby – is hidden, said to bring luck to the person who finds it, but also obligates them to host the next celebration. A similar surprise can be found in another French cake for this holiday – the Galette des Rois.

Recipe for Epiphany Cake

Preparing the Epiphany Cake, also known as the Mardi Gras King Cake, is not complicated but requires attention to detail for the best results. Here is a tried and tested recipe for Epiphany Cake that will delight your guests with both its taste and presentation.

Ingredients:

Cake:

  • 500g plain flour,
  • 100g sugar,
  • 125ml warm milk,
  • 2 eggs,
  • 70g butter (melted),
  • 25g fresh yeast or 7g instant yeast,
  • a pinch of salt.

Filling (optional):

  • 100g cream cheese,
  • 35g icing sugar,
  • 1 teaspoon cinnamon,
  • fruit jam or other preferred filling.

Decoration:

  • icing (icing sugar + a splash of lemon juice),
  • food colouring: purple, green, gold,
  • sprinkles or sugar decorations.

Preparation:

  1. Yeast starter: In a small bowl, mix warm milk, yeast, and a tablespoon of sugar. Set aside for 10 minutes until it becomes active.
  2. Cake mixture: In a large bowl, combine flour, sugar, and salt. Add eggs, yeast starter, and melted butter. Knead the dough for about 10 minutes until it is smooth and elastic. Leave it in a warm place for 1 hour to rise.
  3. Forming: Roll out the risen dough into a rectangle. Add filling if desired and roll into a log. Form a wreath shape by connecting the ends of the dough. Place on a baking tray lined with baking paper and allow to rise for another 30 minutes.
  4. Baking: Bake at 180°C for 25-30 minutes until golden. Once cooled, decorate with icing and colourful food colouring, creating the characteristic stripes.
