Cottage cheese toasts aren't technically toasts, as they lack bread. Instead, I bake cottage cheese, cheddar cheese, and deli meat. This recipe is perfect for anyone avoiding carbohydrates and gluten and those on a ketogenic diet. Crunchy "sandwiches" are ideal for the evening when you're peckish but don't want to indulge too much before bed. It's a straightforward and quick recipe that will satisfy your taste buds.

Cottage cheese isn't just an accompaniment but a base for many other dishes. It works well in fritters, can be used to make simple mini pizzas or wraps, and, in this dinner version, it replaces bread in toasts. It’s also a handy recipe for running low on bread.

Protein is an essential nutrient, especially in the evening. It aids muscle regeneration during sleep and keeps you fuller for longer, which can help prevent late-night snacking. These protein toasts are a tremendous end-of-day meal.

Even though they are satisfying, the cottage cheese toasts are relatively light and easy to digest. They won't overburden your stomach at bedtime, allowing for a restful night’s sleep.

Ingredients:

                  
  • 100 g of cottage cheese,
  • 50 g of grated cheddar cheese,
  • 3 slices of deli poultry,
  • 1-2 teaspoons of red pesto (optional),
  • 2 eggs,
  • 2 tablespoons of chopped chives,
  • Salt and pepper to taste,
  • A pinch of sweet and spicy paprika.

Instructions:

          
  1. In a bowl, combine the cottage cheese, grated cheddar cheese, diced deli meat, pesto, eggs, and finely chopped chives.
  2. Season with salt, pepper, and paprika to your liking.
  3. Preheat a toaster or pan.
  4. Scoop a portion of the mixture and cook until the toasts are golden brown.

Serve the cottage cheese toasts warm. You may serve them with your favourite sauce, or simply with ketchup. Enjoy!
