Grilled perfection: Why meatballs are the new barbecue stars
Pork neck, sausage, and black pudding are barbecue favourites. Everyone loves them, though children often have their reservations. With them in mind, I began preparing meatballs, only to discover that they are a hit with all ages. They are delicious and well-seasoned.
When we invite friends over for a barbecue, we usually stick to a tried-and-tested menu. Sausages or black pudding always turn out wonderfully. Pork neck or chicken fillets are no longer a mystery to us. However, we are slightly more hesitant when it comes to ground meat, which we definitely use less frequently on the grill.
What ground meat to choose for grilling?
Ground meat is ideal for grilling. The best example is, of course, burgers, a field in which Americans excel. Ground meat is also widely used in the Balkans. The famous koftas are skewers made of minced meat with a hint of oriental spices, prepared on the grill. You can grill dishes made from minced beef, pork, or even poultry.
Serve meatballs with a refreshing salad
If you don't have experience with preparing dishes from ground meat on the grill, try starting with meatballs. The recipe is very straightforward. This dish has another advantage – it doesn't require marinating. It's best to use mince that you've ground yourself or ask for freshly ground meat at the shop. Grilled meatballs taste best with Greek tzatziki sauce or our traditional cucumber salad.
Grilled meatballs
Ingredients:
- 450g of minced meat (beef, pork, poultry, or a mix),
- 2 cloves of garlic,
- 1 egg,
- Salt and pepper to taste,
- Paprika and preferred spices to taste,
- A few sprigs of parsley,
- Oil,
- Flour or breadcrumbs for thickening.
Preparation method:
- Remove the meat from the fridge and allow it to reach room temperature.
- Finely chop the parsley.
- Add the egg, press the garlic, and season to taste. Mix the mass by hand, adding the parsley at the end.
- If the mixture is too runny, thicken it with flour or breadcrumbs.
- Wet your hands and form the meatballs.
- Place them on a tray and brush each one with oil.
- Grill them on a hot grill for about 10-15 minutes, turning occasionally.
