These pancakes, served with peanut butter, a bit of jam, and a handful of thawed fruits, are delicious and a nutritious start to the day. The recipe, available on his official site, is designed for four people and takes only 20 minutes to prepare. These pancakes will delight your taste buds and make you feel like you're in a luxury hotel.

Jamie Oliver's fluffy banana pancakes

Ingredients:

  • 2 ripe bananas,
  • 120 grams of oats,
  • 240 millilitres of semi-skimmed milk,
  • 250 grams of flour,
  • 1.5 teaspoons baking powder,
  • 1 teaspoon vanilla extract,
  • olive oil for frying,
  • 4 heaped teaspoons of your favourite jam,
  • peanut butter for serving,
  • a handful of thawed fruits for serving.

Instructions:

  1. Start by peeling one banana and blending it into a smooth purée.
  2. Add the oats, milk, flour, baking powder, vanilla extract, and a pinch of sea salt, then blend again until the ingredients are combined.
  3. Peel and slice the second banana into thin slices. Heat a large non-stick pan over medium heat.
  4. When hot, add a teaspoon of olive oil. Drop small portions of the batter onto the pan, placing a few slices of banana on each portion, gently pressing them into the batter. Cook for two to three minutes until the edges start to bubble and the pancakes are lightly golden, then flip and cook for another minute.
  5. While the pancakes are cooking, heat the jam in a small saucepan or microwave with a teaspoon of water to make it more liquid.
  6. When the pancakes are ready, serve them with a spoonful of peanut butter, topping with the heated jam and adding a handful of thawed fruits for extra flavour.
