Mexican delight: The show-stopping salad for every occasion

The usual gyro salad will quickly be set aside. This Mexican salad recipe is worth using, not just for special occasions. The salad bowl always comes back empty to the kitchen.

When Mexican salad graces the table, forks immediately spring into action. With the addition of minced meat, it is hearty and can be substituted for dinner or even lunch. At parties, it always creates quite a stir, and the following day I receive many requests for the recipe. It's an easy way to impress your loved ones without too much fuss in the kitchen.

Mexican salad with minced meat

Colourful, delicious, and satisfying - this salad definitely outshines the competition. It delights with its taste and is unmistakably "rich" in flavour. In my home, I always serve it with nachos.

The spices infuse the meat with a distinct flavour. You can adjust the intensity to your preference, and I often add a bit more hot pepper. You can also include a hot pepper if you enjoy a bit of heat. However, to ensure it doesn't become too overpowering, a sauce based on soured cream and garlic toned down the entire dish.

Ingredients:

  • 500 g minced meat (preferably beef),
  • half a teaspoon of hot pepper (or more),
  • 1 teaspoon of sweet paprika,
  • half a flat teaspoon of cumin,
  • half a teaspoon of granulated garlic,
  • half a teaspoon of oregano,
  • a pinch of chilli,
  • salt and pepper to taste,
  • 1 can of red beans,
  • 1 can of sweetcorn,
  • 1 red onion,
  • 1 red bell pepper,
  • 1 green bell pepper,
  • 2-3 tomatoes,
  • 100 g grated Cheddar cheese,
  • 1 head of iceberg lettuce,
  • oil for frying,
  • chopped fresh coriander for garnishing,
  • tortilla chips for serving.

Sauce:

  • 200 ml thick soured cream,
  • 2 flat tablespoons mayonnaise,
  • 1-2 tablespoons lime juice,
  • 1 garlic clove,
  • a pinch of chilli,
  • salt and pepper to taste.

Preparation method:

  1. Heat oil in a pan.
  2. Add the minced meat and spices, and fry until browned, breaking it apart with a spatula. If the mixture is too dry, you can add 2-3 tablespoons of water and simmer until it evaporates.
  3. Set aside to cool.
  4. In a large bowl, place the chopped lettuce, diced onion, tomatoes, and bell peppers.
  5. Add the drained sweetcorn and beans.
  6. Add the fried meat and combine well.
  7. Sprinkle with grated cheese.
  8. Mix the soured cream with mayonnaise, lime juice, hot pepper, and garlic.
  9. Season with salt and pepper to taste.
  10. Drizzle the salad with the sauce and garnish with coriander.

You can also serve the sauce separately, so everyone can add the desired amount directly to their plate. Serve the whole dish with nachos. Enjoy!
