What is Mexican cuisine associated with? Certainly, it is known for the use of an abundance of spices in its dishes. This lends them an extraordinary aroma. This is also true for this pancake filling, which my family loves.

Pancakes are a dish that enjoys immense popularity worldwide. They are most often served in a sweet version with jam or cottage cheese. However, when filled with a Mexican filling, they can become a hearty meal.

How to prepare pancakes in a Mexican style?

Preparing pancakes in a Mexican style is incredibly simple. This savoury dish is perfect for lunch or a warm dinner. As soon as they appear on the table, they are quickly devoured. Pancakes are prepared as usual, so there will be no surprises here. However, the distinctive feature is the filling, which combines all the best aspects of Mexican cuisine, namely well-seasoned beef with crunchy vegetables.

Pancakes are worth baking

These pancakes taste great with sauces, and a tomato sauce would be perfect. Once all the pancakes are filled with the stuffing, you can also place them in a baking dish and bake them in the oven. Additionally, it's worth pouring sauce over them and sprinkling with cheese. Prepared this way, they will be even more filling.

Mexican style pancakes

Ingredients for pancakes:                      

  • 250 grams of all-purpose flour,
  • 2 eggs,
  • 500 millilitres of milk,
  • 350 millilitres of sparkling water,
  • a pinch of salt,
  • a tablespoon of oil.

Ingredients for stuffing:                                          

  • 1 onion,
  • 1 red bell pepper,
  • 2 cloves of garlic,
  • 200 grams of ground beef,
  • 1 teaspoon of hot paprika powder,
  • 1 teaspoon of ground cumin,
  • 1 teaspoon of sweet paprika,
  • 1 teaspoon of salt,
  • 1 teaspoon of pepper,
  • a tablespoon of oil,
  • 250 grams of grated cheese.

Instructions:                          

  1. Start by preparing the pancake batter. Place all the ingredients in a bowl and mix thoroughly to avoid lumps.
  2. Let the batter rest for 20 minutes, then cook the pancakes in a heated pan.
  3. Prepare the stuffing: heat oil in a pan, add chopped onion, chopped bell pepper, and minced garlic. Sauté until the ingredients are translucent.
  4. Add the meat and cook until it turns brown.
  5. Add the spices and mix thoroughly.
  6. Place a portion of stuffing on the cooked pancake, sprinkle with grated cheese, and wrap.
  7. Cook the finished pancakes in the pan so that the cheese melts, or bake them in the oven with tomato sauce and cheese.
