Holiday biscuits shaped like walnuts were a hit in Eastern Europe are now experiencing a resurgence. These shell-shaped biscuits, made from crumbly pastry dough, are traditionally prepared using a special biscuit maker. However, if you don't have this equipment at home, don't worry. You can bake walnut biscuits in another ingenious way.

This method allows sweet oreshki to be enjoyed even by those without a special biscuit maker. Anyone can make them in a regular oven. You simply need to prepare moulds shaped like walnuts, which you can then fill with any cream, such as walnut or pistachio cream.

A homemade idea for walnut-shaped biscuit moulds

Before preparing walnut biscuits without a biscuit maker, you need to make the moulds. For this, you need: 1 cleaned half walnut shell, baking parchment, and aluminium foil.

Cut rectangles from the parchment paper and aluminium foil. The paper should be larger – about 13 x 20 centimetres, and the aluminium foil smaller – 13 x 8 centimetres. Crumple the paper into a ball and wrap it halfway with aluminium foil. Then place it in the walnut shell. Wrap the foil to the end and press the mould into shape. Carefully remove it. Make 30 biscuit moulds this way.

Recipe for walnut biscuits

With the given proportions, you can prepare about 30 biscuits filled with walnut cream.

Ingredients:

  • 2 eggs,
  • 250 grams of flour,
  • 300 grams of butter,
  • 200 grams of icing sugar,
  • 1 tablespoon of sour cream,
  • 1/2 teaspoon of bicarbonate of soda,
  • 1 teaspoon of vinegar,
  • 150 grams of dulce de leche,
  • 150 grams of ground walnuts,
  • 60 millilitres of milk.

Instructions:

  1. Melt half a stick of butter in a saucepan.
  2. In a bowl, add the flour, 2 tablespoons of icing sugar, the melted and cooled butter, 2 eggs, and sour cream.
  3. In a separate dish, prepare the bicarbonate of soda with vinegar; it should foam once combined. Add it to the dough and mix the ingredients with a spoon.
  4. Work the dough by hand and form it into a ball.
  5. Scoop small portions of the dough with a teaspoon and shape them into balls. Press them onto the prepared biscuit moulds on the convex side.
  6. Place the filled moulds in a preheated oven at 180 degrees Celsius for 15 minutes. Set aside to cool after baking.
  7. Pour hot milk over the ground walnuts and let them cool. They must be cold to prevent the cream from curdling.
  8. Using a mixer, beat 1 cup of butter into a fluffy cream. Add 1/4 cup of icing sugar and 3 tablespoons of dulce de leche. Mix, and then combine with the walnuts.
  9. Spoon the cream into both halves of the biscuits, and then combine them into walnut shapes.
