Nostalgic revival: Sprat paste makes a tasty comeback

We often eat cold cuts and cheddar cheese because making sandwiches with these is straightforward. However, when we have a bit more time, it's worth making a paste that will completely transform your breakfast. The paste based on sprats can be prepared even quicker than an egg-based one.

This paste was a hit

A can of smoked sprats is a staple in my pantry. I inherited this habit from my mum, who often used these little fish to make a sandwich paste for Friday breakfast.

Although sprats are small, their flavour is rather strong. To soften this, it's a good idea to mildly soften it with cottage cheese, particularly if you prefer a subtler taste or if children will be eating sandwiches with the paste. You can now enhance it with additional ingredients like sun-dried tomatoes, eggs, or lemon zest.

Dietitian recommends sprats

Sprats were long underrated, but they are experiencing a revival. They are increasingly appearing in tourist resorts and being sold as a quick fish snack.

While there's still a while before the summer holiday, you can come back from your next shop with a tin of sprats. Below, you'll find a recipe for a simple but delicious sprat paste. It's perfect for sandwiches but also pairs well with hard-boiled eggs.

Sprat paste

Ingredients:

  • 225g of cottage cheese,
  • a tin of smoked sprats,
  • a tablespoon of yogurt or cream cheese spread,
  • salt and pepper to taste,
  • a few sprigs of chives or dill,
  • lemon juice to taste.

Directions:

  1. Remove the tails from the sprats and drain the excess oil. Mash them with a fork.
  2. Mash the cottage cheese with a fork as well. Add yogurt or cheese spread.
  3. Combine the sprats with the cottage cheese, and season to taste.
  4. Sprinkle the paste with herbs.

Sprat paste is a delightful addition to sandwiches, especially when served on wholemeal bread.
