Quick and easy skyr bagels: A protein-packed treat
Homemade bread need not be time-consuming. Forget about yeast or sourdough and enjoy a straightforward recipe for homemade bagels. All you have to do is mix skyr and three ingredients from the kitchen cupboard. In just over 30 minutes, you’ll have the best rolls.
There is much to be said about the benefits of homemade bread, and surely no one needs convincing of its superiority over shop-bought bread. Packaged or shop-baked products don’t always have a good composition, and checking the ingredients used in the shop is not the easiest task, which most people skip while shopping. By baking bagels at home, it's much easier to control their ingredients.
Skyr bread, something for the discerning
The main ingredient is skyr, the trendy high-protein product that has taken Polish kitchens by storm. It is a thick, creamy yoghurt known for its high protein content and low fat content. It is made from skimmed, pasteurised milk with added bacterial cultures that support intestinal flora. Only 100 grams of skyr provides 17 grams of protein, and the fat content is minimal. It also contains B vitamins and a significant amount of calcium, which supports bone health and the immune system.
Recipe for skyr bagels
With the given proportions, you can make about five to six medium-sized bagels. To maintain the characteristic hole in the middle while baking, it’s best to insert a roll of baking paper in the centre. You can also decorate the top of the bagels with seeds and other toppings—poppy seeds, flaxseeds, black cumin, or sesame work well.
Ingredients:
- 450 grams of skyr
- 220 grams of plain flour or half plain flour and half oat flour
- 2 teaspoons of baking powder
- 1.5 teaspoons of salt
Preparation:
- Transfer the skyr to a bowl.
- Sift the flour and baking powder.
- Add the salt.
- Mix everything first with a spatula, then knead by hand.
- Transfer it to a board lightly dusted with flour if necessary.
- Divide the kneaded dough into five parts.
- Preheat the oven to 170°C, with the fan function on.
- Roll each piece and shape it into a bagel.
- Place on a baking tray lined with baking paper, seam side down.
- Optionally, sprinkle with toppings; brushing with a little egg white first can help them stick.
- Bake in the oven for about 30 minutes until golden.
