These cookies are perfect for any occasion, whether it's a party or a sweet weekend treat. Fluffy sponge cake, sweet raspberry jam, and velvety buttercream create an irresistible combination of flavours. They make the ideal one-bite treat.

Just the sight of them can make you melt. Many people enjoyed similar sponge cookies in their childhood, while others will discover them for the first time with this recipe. Fortunately, it's straightforward to prepare, so even those new to baking can manage. Raspberry cream cookies combine a crispy pastry, sweet jam, and delicate buttercream, making them utterly irresistible.

Ingredients:              

  • 1 3/4 cups of plain flour,
  • 1/3 cup of caster sugar, 
  • 1 1/2 teaspoons of baking powder, 
  • 1/2 teaspoon of vanilla extract, 
  • 2 eggs, 
  • 100 grams of butter, 
  • 1/2 jar of raspberry jam,
  • icing sugar for sprinkling. 

Buttercream:       

  • 200 grams of butter,
  • 3 cups of icing sugar, 
  • 1/2 teaspoon of vanilla extract, 
  • 3 tablespoons of milk.

Instructions:

Step 1. In a bowl, use a mixer to beat the softened butter. Then, while continuously mixing, add caster sugar, eggs, plain flour, baking powder, and vanilla extract.

Step 2. From the resulting mixture, form balls with your hands. Place them on a baking sheet lined with parchment paper, gently flattening them. Then, put in an oven preheated to 180°C for 10 minutes.

Step 3. In the meantime, prepare the cream. Mix the butter with icing sugar. Add vanilla extract and milk, and blend the mixture.

Step 4. Cut the baked sponge cookies in half. Spread one half with raspberry jam, apply buttercream, and cover with the other half. Dust the cookies with icing sugar.

The finished kisses are best stored in an airtight container in a cool place. However, they'll disappear so quickly that you won't have to worry about fitting them in the fridge. Enjoy!
