Reinvent your Friday dinner with mushroom oat patties
In many homes we observe growing popularity of vegetarianism. Some people opt for tofu. However, sometimes a change is welcome, and that's where great vegetarian recipes come in handy. My latest discovery is patties made with mushrooms and oats. They taste remarkably like minced meat patties.
I completely understand that not everyone is satisfied with a salad or pasta for dinner. I know fans of traditional flavours who cannot satisfy their appetite with lighter alternatives. For such individuals, a recipe for meat-free patties, which you can serve with potatoes and a salad, works well.
Patties rich in fibre and vitamins
One of the two main ingredients in the à la meat patties is rolled oats. It's not just a great filler that ensures consistency and allows for shaping, but also a highly valuable ingredient.
Rolled oats are less processed than similar instant oats. As a result, they contain more fibre and have a lower glycaemic index. Their only downside is that they require more time to soften. Before adding them to the patty mixture, pour boiling water over them and let them sit for 10 minutes.
How to make à la meat patties without meat?
To prepare 10-12 medium-sized patties, you need:
- 1 cup of rolled oats,
- 250 grams of mushrooms,
- 1 onion,
- 1 egg,
- 2 garlic cloves,
- 2 tablespoons of wheat flour,
- 120 millilitres of breadcrumbs,
- 1 teaspoon of dried thyme,
- salt,
- pepper to taste,
- and rapeseed oil for frying.
Preparation
- First, prepare the ingredients. Peel the onion and garlic and chop them into small cubes. Wash the mushrooms and also chop them into small pieces.
- Heat a tablespoon of oil in a pan and sauté the onion with garlic and mushrooms. Add seasonings – a pinch of salt, pepper, thyme. Cook until the water evaporates. Set aside to cool.
- Mix the cooled mushrooms with the soaked rolled oats. You can squeeze out the excess water beforehand. Add the egg and flour. Form patties in your hands and coat them in breadcrumbs.
- Fry in a heated pan with a little oil until golden brown on both sides.
Ideas for other vegetarian patties
With added rolled oats, you can also make patties with beets or legumes, like lentils, chickpeas, or beans. Larger patties work great in veggie burgers.
A good idea for a meatless dinner is courgette and carrot patties. These taste excellent topped with a wild mushroom sauce.
