Rumford soup – from military meal to home kitchens

Rumford soup was created over 200 years ago by Benjamin Thompson, known as Count Rumford. He was an inventor and social reformer who worked to improve the living conditions of soldiers and the poor. Under his initiative, the recipe for a cheap yet highly nutritious soup was developed, designed to provide essential nutrients and satisfy hunger. Rumford soup was popular throughout the 19th and 20th centuries, particularly in Central Europe. It was prepared in barracks, hospitals, nursing homes, as well as prisons. Although it was once considered a modest meal, it is now regaining appreciation in home kitchens.

Ingredients and preparation method for Rumford soup

The classic Rumford soup is based on simple and inexpensive ingredients that can be found in every pantry. The ingredients include:

  • 2.5 litres of broth (vegetable or meat),
  • 200 grams of rice or groats,
  • 400 grams of potatoes,
  • 1 can of white beans,
  • 5 carrots,
  • 3 parsley roots,
  • 1 leek,
  • 1 celery root,
  • 3 bay leaves,
  • 3 allspice berries,
  • 3 tablespoons of butter,

The preparation of the soup is extremely simple:
