Smoked mackerel miracle: Reinventing the breakfast spread
This sandwich spread is not only quick to prepare, but also so tasty that it disappears from the bowl before the bread is even sliced. It’s perfect for a nutritious breakfast, nicely replacing the already boring cheese or cold cuts.
Smoked mackerel spread is the ideal balance of salty fish and sour pickled cucumbers. Eggs and mayonnaise add a smooth texture and creamy character to the spread. My children love this combination, although they aren't particularly eager to eat when they see plain mackerel. Sneaking the fish into this spread helps them become accustomed to the taste and realise that mackerel isn’t as scary as it’s made out to be.
Smoked mackerel sandwich spread
Preparing this spread is really quick and doesn’t take more time than boiling hard-boiled eggs. This makes it perfect for mornings when you don’t have much time to cook.
If you want to lighten this spread a bit, you can replace part of the mayonnaise with natural yoghurt. I wouldn’t completely give up on this ingredient because it pairs wonderfully with sandwich spreads, giving them a creamy character. Instead, you can opt for light mayonnaise with a lighter and less calorific composition. Leave the seasoning for the end - mackerel itself is salty, so it’s easy to go overboard with the amount of salt.
Ingredients:
- 1 smoked mackerel,
- 2 eggs,
- 2-3 pickled cucumbers,
- 2-3 tablespoons mayonnaise,
- chives,
- half a small red onion (optional),
- salt and pepper to taste.
Preparation:
- Carefully remove the skin and bones from the mackerel. Transfer the meat to a bowl and break it up with a fork into smaller pieces.
- Boil the eggs until hard-boiled, allow them to cool, then peel. Finely chop with a knife or mash with a fork and add to the bowl with the mackerel.
- Cut the pickled cucumbers into small cubes. If they have tough skin, you can peel them first. You can also grate them on a coarse grater and then gently squeeze out the excess juice. Add to the bowl with the mackerel and eggs.
- Finely chop the chives and add to the other ingredients. You can optionally also add finely chopped onion.
- Add the mayonnaise and mix thoroughly.
- Taste the spread and season with pepper and salt to taste.
The smoked mackerel and egg sandwich spread is ready to eat immediately after preparation. Just spread it on rolls or bread and you're done. A delicious breakfast with fish is ready to be eaten. Enjoy!
