Spice up your grill: Sensational chilli mushrooms recipe

When I grill pork neck, I don't accompany it with chicken skewers. Instead, I prepare a vegetable side dish on skewers, which complements the meat perfectly. Mushrooms in a spicy marinade are always the biggest hit. They are so delicious that some people enjoy them as a snack on their own.

While planning grilled dishes, it's worth considering not only what to cook on the barbecue but also the cold side dishes that will complete the meal. A potato salad with a delightful yoghurt sauce fits this role perfectly. You can enhance it with hard-boiled eggs and crunchy vegetables to ensure full nutritional value during a family gathering.

Fill larger caps with a delicious stuffing

Use the spicy marinade not only for preparing neat small additions to the meat. Coat larger caps in it, and separately prepare a delicious stuffing to fill them to the brim. Inside, you can add sautéed spinach, feta cheese, tofu, as well as tomatoes and mozzarella. If any guests do not eat meat, mushrooms with caprese can save your honour.

Chilli sauce mushrooms for the grill

It's wise to prepare mushrooms for the grill a day in advance. If they sit in the refrigerator submerged in the spicy marinade overnight, they will be juicier and more intense in flavour.

Ingredients:

  • 450g mushrooms,
  • 3 tablespoons olive oil,
  • 2 cloves of garlic,
  • 2 tablespoons chilli sauce, such as sambal oelek, sriracha, or tabasco,
  • 1 tablespoon light soy sauce,
  • 1 teaspoon rice vinegar or lime juice,
  • 1 teaspoon honey or maple syrup,
  • parsley or coriander.

Instructions:

  1. Rinse the mushrooms under a gentle stream of water, then dry them with a paper towel. If they are huge, cut them in half.
  2. In a large bowl, prepare the marinade by mixing olive oil with spicy chilli sauce. Add a teaspoon of rice vinegar or lime juice, a teaspoon of honey or maple syrup, and crushed garlic. Thoroughly coat the mushrooms in the prepared marinade.
  3. Cover with a lid and let it sit for at least 30 minutes.
  4. Skewer the chilli sauce-coated mushrooms or place them on a metal grilling tray.
  5. Grill for 10–15 minutes, turning and basting with the remaining marinade from the bowl.
  6. Sprinkle the hot mushrooms with chopped parsley or coriander.
