Warming winter treat: Pizza soup takes comfort to a new level

When the thermometer cruelly indicates that spring is still a long way off, a serving of hot soup is just what's needed. Instead of cooking up cucumber, tomato, krupnik, or goulash soup once again, opt for an unusual pizza soup. The very name sparks the imagination and makes even picky eaters interested in the contents of their bowl.
Pizza soup for dinner
If you thought that soup couldn't fill you up, this recipe will quickly prove you wrong. Pizza soup will not only warm you on a cold day but also quieten persistent stomach growling. There's a lot going on inside—it contains minced meat, mushrooms, and onions. The addition of cream cheese makes it creamy and delicate.
This soup is a deconstruction of pizza, full of flavour and aroma. After a serving of this deliciousness, no one will be asking when the second course will be ready.
Ingredients:
- 600g minced meat,
- 500g mushrooms,
- 3 onions,
- Green or black olives without stones (optional),
- 2 cans of chopped tomatoes,
- 140g cream cheese,
- 1 teaspoon dried oregano,
- 1 teaspoon dried basil,
- 1.5 litres of chicken broth,
- 200ml cream,
- Salt, pepper, and chilli to taste,
- Grated Parmesan or Grana Padano,
- Oil.
Instructions:
- Heat oil in a pot and sauté the mince.
- Chop the onions and mushrooms into small cubes and add to the sautéed mince.
- Sauté everything for a few minutes until the mushrooms shrink and the onions become translucent. Add the chopped olives.
- Pour in the chicken broth, add oregano, basil, salt, pepper, and a bit of chilli.
- Cook for 30 minutes.
- Then add the chopped tomatoes and diced cream cheese.
- Mix thoroughly and bring to a boil.
- Take a portion of the broth and mix it with the cream. After tempering, pour it into the pot.
- Season the entire dish to taste.
Serve the finished soup in deep bowls and sprinkle with Parmesan. You can also use grated mozzarella. Enjoy!
