Indulge in simplicity: Yoghurt apple pie muffins delight
Apple pie is a dessert that everyone loves. Instead of baking a large cake again, I make delicious muffins. They are so tasty that no one asks for the cake.
Apple pie muffins are perfect for a quick afternoon snack. They are easy to pack and take to school or work to enhance your lunch. They require little work and are a worthy substitute for the apple pie loved by everyone in the family. The yoghurt cake is straightforward and quick to prepare and works not only for a classic fruit cake.
Yoghurt Apple Pie Muffins
The keys to sweet success are soft and delicate yoghurt-based cake, sweet apples, and a touch of cinnamon. You can prepare these muffins swiftly without even using a mixer. With a moment of mixing and a little patience during baking, you can enjoy a dessert that quickly leaves only empty muffin tins.
The addition of yoghurt makes the cake moist and delicate in taste. It is neither dry nor crumbly, making these muffins a pure pleasure to eat.
You can substitute white sugar with brown sugar and vanilla sugar with real vanilla extract. Melted and slightly cooled butter can also replace the oil. It's best to use firm and tart apples, such as Ligol, for this recipe.
Ingredients:
- 120 ml natural yoghurt,
- 2 eggs,
- 120 ml oil,
- 250 g plain flour,
- 2 teaspoons baking powder,
- 1/2 teaspoon bicarbonate of soda,
- 135 g sugar,
- 1 packet vanilla sugar,
- 2 small apples,
- 1.5 teaspoons cinnamon.
Instructions:
- In one bowl, place the yoghurt, add oil and eggs, and mix thoroughly.
- Add flour, baking powder, cinnamon, bicarbonate of soda, regular sugar, and vanilla sugar in another bowl. Mix.
- Peel the apples, remove the seeds, and cut into small cubes.
- Add half of the chopped apples to the flour mixture and mix. Set the remaining portion aside.
- Add the wet ingredients to the bowl with the apples and gently mix until the ingredients combine. Do not overmix.
- Pour the resulting batter into muffin moulds.
- Add the remaining apples on top. You can additionally sprinkle them with a mix of cinnamon and sugar.
- Place in an oven preheated to 175 degrees Celsius and bake for 20 minutes or until a toothpick comes out clean.
Decorate the finished muffins with icing or sprinkle with icing sugar. Enjoy!
