A refreshing take on potato salad steals the grilling spotlight

Potato salad is a classic dish that holds a beloved place in many Canadian homes. This version tastes even better, with a lighter twist that doesn't rely heavily on mayonnaise. It's a guaranteed success for grilling occasions.

When this salad is on the table, even the best-grilled sausage takes a back seat. This salad is a delightful addition to any grill spread, pairing beautifully with meats or standing on its own. While Germans claim to be the originators, it quickly made its way around Europe. In my version, I choose a lighter yogurt-mayonnaise sauce with olive oil and mustard. Simply mouth-watering!

Potato salad for grilling

This potato salad impresses with its lightness, featuring new potatoes, pickles, and a yogurt-mayonnaise sauce, garnished with chives and dill. Nothing more is needed for happiness here.

Made with new potatoes, this salad is a perfect side dish for grilling. Chill it in the fridge beforehand for enhanced flavour. You can serve it cold, offering a refreshing touch during outdoor grilling.

Ingredients

  • 600 grams of new potatoes,
  • half a red onion,
  • 2 pickles,
  • half a bunch of dill,
  • 2 tablespoons of chopped chives,

Salad dressing:

  • 2 tablespoons of olive oil,
  • 2 tablespoons of lemon juice,
  • 2 teaspoons of brown mustard,
  • 1 tablespoon of mayonnaise,
  • 1 tablespoon of thick natural yogurt,
  • salt and pepper to taste.

Preparation method:

  1. Scrub the new potatoes and cook them in salted water until tender. Be careful not to overcook them.
  2. Drain and set aside to cool.
  3. Thinly slice the red onion and cut the pickles into small cubes.
  4. Cut the new potatoes into halves or quarters and place them in a bowl.
  5. Add the onion and pickles to the bowl.
  6. Combine olive oil, mustard, yogurt, lemon juice, salt, and pepper in a jar. Seal and shake vigorously until a smooth sauce forms.
  7. Add the chopped dill and chives to the sauce and mix.
  8. Mix the vegetables with the sauce and refrigerate for 3-4 hours for the flavours to meld well.
