Simple cupcakes without a mixer
This is a recipe worth having on hand whenever you crave something sweet. The dry ingredients are mixed and combined with the wet ones. After about 15-20 minutes in the oven, you'll have cupcakes so tasty that it's hard to stop at just one. These could easily be sold in bakeries.
A toothpick, such as a long skewer, will be useful for testing doneness. Use it to check if the inside is ready. This recipe is just the starting point for cupcake experimentation. You can enrich the batter with grated lemon zest, chopped nuts, raisins, or cranberries, and add chocolate pieces or a few drops of flavouring. Fill the inside with pudding, jam, or chocolate. Simply pour some batter into the mold, add the filling, and cover with more batter.
Ingredients:
- 2 cups of all-purpose flour,
- 2/3 cup of sugar,
- 2 teaspoons of baking powder,
- 1 packet of vanilla sugar,
- a pinch of salt,
- 1 cup of milk,
- 1 egg,
- 1/2 cup of vegetable oil.
Instructions:
- In a bowl, combine the all-purpose flour, sugar, baking powder, and salt, and mix well.
- In another large bowl, combine the oil, egg, and milk.
- Add the dry ingredients to the wet ingredients and mix with a spoon or spatula just until combined.
- Fill the cupcake molds with the batter to about 2/3 of their height. You can add your chosen filling halfway through filling.
- Place in an oven preheated to 177 degrees Celsius and bake for about 15-20 minutes, until a toothpick comes out clean. The baking time depends on the size of the molds.
You can decorate the finished cupcakes with powdered sugar, glaze, or chocolate frosting. Whipped cream with mascarpone and fresh fruit for decoration also works well. Enjoy!
