Carnival delights: The surprising rise of pudding-powered donuts

Many enthusiasts enjoy traditional yeast dough donuts as well as their alternative versions. The latter are generally lighter and easier to prepare. Here are some recipes for such treats. These donuts always turn out well and quickly disappear from the plate.

Tiny, soft donuts are a perfect idea for a Carnival dessert. There’s no need to knead yeast dough or wait for it to rise. There are quite a few alternative recipes, but this one stands out due to the inclusion of pudding.

Pudding is not just for dessert

Pudding? We often associate this dessert with childhood. Its ingredients are simple: just milk, starch, sugar, and flavourings. You can prepare it very quickly, for example, for a snack—it tastes great with fresh fruit or juice. That's how pudding was once thought of. Today, it's understood that its culinary use is much broader.

Not just as a filling

And what does this cream have to do with donuts? It has long been used as a filling, providing an alternative to traditional preserves, which has its fans. It turns out that it can also be used in dough. Pudding donuts are extraordinarily light, delicate, and pleasant in taste. We fry them in a mini version. They don't absorb much fat because, similar to traditional pastries, a bit of alcohol is added to them. They don't require filling; the vanilla flavour is entirely sufficient. Pudding can be used in two ways: by adding just the powder or after it's cooked.

Donuts with pudding-mix

  • 1 package of vanilla pudding,
  • 2 cups of flour,
  • A large container of plain yogurt,
  • 3 eggs,
  • 2 teaspoons of baking powder,
  • 1 tablespoon of spirit,
  • Oil for frying,
  • Powdered sugar for sprinkling.

Instructions:

  1. Sift the flour through a sieve. Add eggs, yogurt, pudding, powdered sugar, baking powder, and spirit. Mix everything thoroughly.
  2. Heat oil in a tall pot. The temperature should not be lower than 170°C. Once the oil is hot, put the batter into it using a teaspoon.
  3. During frying, the donuts will grow. Fry them until they are golden brown.
  4. After frying, sprinkle them with powdered sugar. Serve while they're still warm.

Donuts with cooked pudding

Ingredients:

  • 2 cups of milk,
  • A package of vanilla pudding,
  • 3 eggs,
  • 2 cups of flour,
  • 2 teaspoons of baking powder,
  • 1/4 cup of sugar,
  • 2 tablespoons of alcohol, such as spirit,
  • Oil for frying,
  • Powdered sugar for sprinkling.

Instructions:

  1. Cook the pudding according to the instructions using 2 cups of milk. While still warm, add sugar and mix.
  2. To the cooled pudding, add eggs and alcohol.
  3. Add the dry ingredients: flour mixed with baking powder and salt.
  4. Mix the dough; it should have a thick consistency.
  5. Fry donuts formed with a spoon in hot oil.
  6. Serve them with powdered sugar.
