Ingredients:

                                  
  • medium cauliflower (about 600 grams), divided into florets,
  • 2 eggs,
  • 3 tablespoons of flour (wheat or gluten-free),
  • small onion, finely chopped,
  • 2 cloves of garlic, pressed,
  • salt and pepper to taste,
  • fresh herbs (dill, parsley) optional,
  • oil for frying

Preparation:

                      
  1. Steam or boil cauliflower in salted water until tender, drain and set aside to cool slightly.
  2. Blend the vegetable into a fine, but not mushy, consistency.
  3. Place cauliflower, eggs, flour, onion, and garlic in a bowl. Season with salt and pepper. Mix everything thoroughly into a uniform mass.
  4. Heat oil in a pan. Spoon small portions of the mixture and fry the pancakes on medium heat until they are golden and crispy on both sides.
  5. Serve with your favourite plain yogurt or a light yogurt-herb sauce.
