Copenhagen salad
When I'm looking for the perfect addition to a meal, I opt for something light, healthy, and full of flavour. A salad made with fresh vegetables is a perfect choice. It combines the crunchiness of white and napa cabbage, the sweetness of carrots, and the mild sharpness of leeks, while a creamy dressing enhances the overall taste. This is a universal recipe that pairs well with both meat and vegetarian dishes.
What makes this salad so special? The right choice of ingredients and simplicity of preparation. Because of this, it is a versatile addition that works great for a holiday dinner.
Ingredients for the salad:
- 1/2 head of white cabbage
- 300 grams of napa cabbage
- 300 grams of carrots
- 100 grams of celery root
- White part of a leek
Ingredients for the dressing:
- 60 grams of Greek yogurt
- 2 teaspoons honey mustard
- 1 clove of garlic
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Preparation method:
- Wash all vegetables thoroughly and dry them. Slice the cabbages into thin strips, grate the carrots and celery, and cut the leek into half-moons.
- In a small bowl, mix all the dressing ingredients into a smooth paste.
- Combine all the prepared vegetables in a large bowl. Pour the prepared dressing over them and mix thoroughly.
- Cover the bowl with plastic wrap, and set it aside in the refrigerator for at least an hour to allow the flavours to blend.
You can modify the classic Copenhagen salad recipe according to your preferences. Add sliced apple or pear to give it a sweet taste, or season the dressing with hot pepper. Adding chopped dill or parsley won't hurt either. Enjoy!
