  • 100 ml water,
  • 1/2 teaspoon sugar,
  • 9 g fresh yeast.

  • 250 g wheat flour,
  • 3/4 teaspoon salt,
  • 85 g 18% sour cream,
  • 1 tablespoon oil.

Preparation:

  1. Starter: Start by preparing the starter. Dissolve the sugar and yeast in warm water (not hot!). Set aside for a few minutes until the starter bubbles slightly and rises.
  2. Dough: Add salt and sour cream to the flour, pour it into a large bowl, and add the prepared starter. Begin kneading the dough. During kneading, add the oil and continue mixing until the dough becomes uniform and slightly sticky.
  3. Proofing: Cover the bowl with cling film and set the dough aside to rise for about an hour. It should double in size.
  4. Shaping the rolls: After rising, briefly knead the dough to remove excess air. Then, divide it into five equal parts and gently flatten them into balls.
  5. Second proofing: Place the shaped rolls on a baking tray lined with parchment paper. Let them rise again for 20 minutes.
  6. Baking: Preheat the oven to 190°C and bake the rolls for about 18 minutes until they become golden and crispy on top.
