What is Mexican cuisine often associated with? Certainly, it involves the use of plenty of spices in its dishes, giving them an extraordinary aroma. This is also true for this pancake filling, which my family loves.

Pancakes are a dish that enjoys immense popularity worldwide. While they are most often served in a sweet format with jam or cottage cheese, they can become a hearty meal when filled with a Mexican-style filling.

How to prepare pancakes in Mexican style?

Preparing pancakes Mexican-style is incredibly simple. This savoury dish works excellently as a lunch or warm dinner. As soon as they appear on the table, they disappear in no time. The pancakes are prepared in the usual way, so there will be no surprises here. However, the real impression comes from the filling, which combines everything great about Mexican cuisine, including well-seasoned beef with crunchy vegetables.

Pancakes are worth baking

These pancakes taste great with sauces. A tomato sauce would be perfect. Once all the pancakes are filled with the stuffing, you can place them in a baking dish and bake them in the oven. Additionally, it’s worth pouring sauce over them and sprinkling with cheese. Prepared this way, they will be more filling.

Mexican style pancakes

Ingredients for pancakes:

                          
  • 500 ml of all-purpose flour,
  • 2 eggs,
  • 500 ml of milk,
  • 375 ml of sparkling water,
  • a pinch of salt,
  • a tablespoon of oil.

Ingredients for stuffing:

                                              
  • 1 onion,
  • 1 red bell pepper,
  • 2 cloves of garlic,
  • 200 g of ground beef,
  • 1 teaspoon of hot paprika powder,
  • 1 teaspoon of ground cumin,
  • 1 teaspoon of sweet paprika,
  • 1 teaspoon of salt,
  • 1 teaspoon of pepper,
  • a tablespoon of oil,
  • 250 g of grated cheese.

Instructions:

                              
  1. Start by preparing the pancake batter. Place all the ingredients in a bowl and mix thoroughly to avoid lumps.
  2. Let the batter rest for 20 minutes, then fry the pancakes in a heated pan.
  3. Prepare the stuffing: heat oil in a pan, add chopped onion, chopped bell pepper, and minced garlic. Sauté until the ingredients are translucent.
  4. Add the meat and fry until it turns brown.
  5. Add the spices and mix thoroughly.
  6. Place a portion of stuffing on the fried pancake, sprinkle with grated cheese, and wrap.
  7. Fry the finished pancakes in the pan until the cheese melts, or bake them in the oven with tomato sauce and cheese.
