Elevate your dinner: Parmesan-topped chicken delight
Chicken fillets don't have to end up as bland cutlets on your plate. With just a few simple additions, they can be transformed into something delightful.
Juicy chicken, sweet cherry tomatoes, and a crispy Parmesan topping make for a simple yet impressive dinner. It doesn't require much preparation, and it looks so appealing that you can serve it confidently for special occasions as well.
Chicken with Parmesan topping
Put aside the usual cutlets; this chicken will outshine them in flavour. An aromatic layer of sautéed sweet cherry tomatoes enhanced with garlic and onion, tender and juicy chicken breast, and a crispy Parmesan crumble with parsley—it's a dish that even a fine restaurant would be proud to serve.
Ingredients:
- 2 chicken fillets,
- 1 tablespoon olive oil,
- 1 small onion,
- 2 cloves of garlic,
- 250 grams cherry tomatoes,
- 1/4 cup white wine,
- 2 tablespoons chopped fresh basil,
- Salt and freshly ground black pepper to taste.
Parmesan topping:
- 1/2 cup freshly grated Parmesan,
- 1/4 cup bread crumbs,
- 1 tablespoon chopped fresh parsley,
- 1 tablespoon melted butter or olive oil.
Preparation method:
- Lightly pound the chicken fillets, then season them with salt and pepper.
- Sauté them in an ovenproof skillet until browned, then remove.
- Add the chopped onion to the same skillet and cook until softened and translucent, adding more olive oil if needed.
- Add minced garlic and cook for another minute, being careful not to burn it.
- Add halved cherry tomatoes to the skillet. Cook, stirring, until they start to release their juice and soften slightly.
- Pour in the white wine and cook until most of the liquid evaporates. You can skip this step if you prefer not to use wine.
- Add chopped basil and season with salt and pepper.
- Place the chicken fillets on top of the tomato layer in the skillet.
- In a small bowl, mix grated Parmesan, bread crumbs, and chopped parsley.
- Drizzle with melted butter or olive oil and mix to combine the ingredients.
- Evenly sprinkle the prepared topping over the chicken fillets.
- Place the skillet in an oven preheated to 204 degrees Celsius and bake for about 20-25 minutes, until the chicken is fully cooked and the topping is golden and crispy.
- Serve the hot chicken directly from the skillet, garnished with fresh parsley or basil.
