Elevate your soup: Two simple additions for comforting broth

Once again, it turns out that the simplest solutions are the best. You can easily turn a large pot of broth into a delicious North American-style soup. Serve it with vegetables and pieces of chicken. You can add noodles or rice, making a second course unnecessary.

On the second day, you can make a classic tomato soup from the broth, which is an excellent option. However, if you want to break this pattern, just add 2 ingredients, and the soup will take on a completely different character. Since I discovered the idea for creamy broth, I often return to this recipe. This particular soup with additions pleasantly warms and improves the mood.

How to make flavourful broth?

Even if you plan to make creamy broth right away, ensure a delicious stock. The best results come with the addition of 2 types of meat. Chicken serves as the base, but it's worth adding a bit of beef, which will give the stock depth. You can also follow the advice and add 2 cloves to the broth. With this addition, the soup will certainly not be bland.

Recipe for creamy broth

Cook the stock in the standard way. Cover the meat with water and cook until tender. Skim off the scum, add soup vegetables, a bay leaf, and allspice. When the vegetables are tender, reduce the heat to keep the broth only slightly heated and gradually absorbing flavour. Before creaming the soup, make sure the stock is not cloudy. If skimming off the scum is not sufficient, try other methods of clarifying the broth.    

Ingredients: 

  • 1 whole chicken,
  • about 300 grams of beef with bone,
  • a bunch of soup vegetables,
  • onion,
  • 3-4 bay leaves,
  • 3 grains of allspice,
  • 2 egg yolks,
  • about 200 millilitres of heavy cream,
  • salt, pepper to taste.

Instructions:

  1. Start cooking the meat for the broth. When it's tender, add the soup vegetables and an onion roasted over the burner. Skim off the scum.
  2. Add bay leaves and allspice. Cook for about 2 hours over low heat. Remove the meat and vegetables from the stock.
  3. In a separate bowl, mix the yolks with the cream. Add hot stock and then pour it into the broth. Stir the whole mixture and heat for a little while longer over low heat.
  4. Season to taste with salt and pepper. Serve with pieces of meat and diced vegetables on plates.

Suggestions for additions to creamy broth

Creamy broth with chicken and vegetables can be served with noodles, rice, or drop dumplings. It also tastes great with mini croutons made from toast bread. Sprinkle the soup with fresh dill or parsley.
