Embracing summer: Rhubarb dumplings with a citrus twist
Grandma's dumplings with plums are one of those meals fondly remembered, always bringing a smile. While a classic, I choose to use a different fruit at home instead of plums.
Dumplings with plums are a tradition, but those with rhubarb are just as appealing. Once they appear on the table, everyone eagerly awaits the first bite. The soft dough, sweet and tangy filling with a hint of citrus, and a sprinkle of sugar ensure that I return to the kitchen with only empty plates. It's the taste of summer wrapped in a dumpling, always bringing delight.
Rhubarb dumplings
In Canada, the rhubarb season typically runs from April to June, making it the perfect time to enjoy its unique flavour. This vegetable is not only superb for pies and compotes, but it also shines in traditional dishes like dumplings.
Rhubarb dumplings beautifully combine the sour, refreshing taste of rhubarb with a sweet, delicate potato mixture. Adding lemon juice and zest enhances the flavour with extra freshness and zestiness. As a result, the dumplings taste just like summer in every bite.
Ingredients:
- 800 grams of boiled potatoes,
- 1.5 cups of all-purpose flour,
- 1 egg,
- 2-3 stalks of rhubarb,
- lemon zest and juice to taste,
- sugar.
Additionally:
- butter for melting,
- sugar for sprinkling.
Preparation method:
- Drain and mash the boiled potatoes into a smooth consistency.
- Add the egg, flour, and a pinch of salt. Knead into a uniform dough. If the dough is too sticky, add a bit more flour.
- Wash, peel, and cut the rhubarb into small pieces. Add sugar, lemon juice, and zest to taste (optional).
- Divide the dough into equal parts, forming balls. Flatten each ball in your hand and place some rhubarb filling in the center.
- Seal the edges to create closed dumplings.
- In a large pot, bring salted water to a boil. Carefully drop in the dumplings and cook for about 15 minutes until they rise to the surface.
- Remove the dumplings with a slotted spoon and serve immediately.
The dumplings are delightful drizzled with butter and topped with sugar. To increase the sweetness, consider serving them with whipped cream. It's a sweet treat and a delicious reminder of the warmth and comfort of grandma's kitchen in the summer. Enjoy!
