Gnocchi are traditional Italian dumplings that have become popular globally. The main ingredient is potatoes. When combined with flour and eggs, they create a delicate dough. Their characteristic grooves allow sauces to be absorbed better, enhancing the flavour of each dish. Classic gnocchi can easily be made from just four ingredients: potatoes, flour, eggs, and salt.

Gordon Ramsay, the well-known chef, shared a simple technique to make homemade gnocchi even fluffier. In a new video on his YouTube channel, the chef demonstrated how to prepare delicious gnocchi using simple ingredients you likely already have at home.

The secret to fluffy gnocchi

You only need seven ingredients to make gnocchi. The key step is baking the potatoes beforehand, which gives the gnocchi a unique flavour. Gordon recommends using a potato ricer to make the dough light and fluffy. If you don't have one, you can use a grater.

Gordon Ramsay's gnocchi recipe

Ingredients:

  • 2 large starchy potatoes,
  • 50 g ricotta,
  • salt,
  • freshly ground pepper,
  • 90 g type 00 flour,
  • 1 beaten egg,
  • fresh thyme.

Sauce:

  • olive oil for frying,
  • freshly ground black pepper,
  • 150 g frozen peas,
  • butter,
  • 1 sprig of thyme, leaves only,
  • Pecorino Romano cheese,
  • zest from 1 lemon.

Instructions:

  1. Preheat the oven to 180°C. Prick the potatoes with a fork, brush with oil, and salt. Wrap in foil and bake until tender, about an hour.
  2. Remove the skins from the baked potatoes, preferably while still warm, and pass them through a ricer.
  3. Mix with ricotta, salt, pepper, and flour. Make a well, add the beaten egg, and combine the ingredients.
  4. Add fresh thyme and knead the dough until smooth.
  5. Divide the dough in half, shape into long rolls about 1.5 cm thick. Cut into pieces 2 cm long and gently press each piece with a finger.
  6. Bring water to a boil in a large pot, add the gnocchi, and cook for 1.5-2 minutes until they float to the surface. Drain and leave to dry.
  7. Heat a pan with olive oil, add gnocchi, salt, and pepper. Fry for 1-2 minutes on each side until golden brown.
  8. Add peas, butter, and fresh thyme. Finish with lemon zest and grated Pecorino Romano.
