Potato bites with halloumi

This recipe is also perfect when you don't know what to do with cooked potatoes from the previous day. These bites are crunchy on the outside, yet soft and moist on the inside. They're an excellent snack for a party, a gathering with friends, or simply as a dinner option.
Ingredients:
- 600 grams of potatoes,
- 1 teaspoon of salt,
- 100 grams of smoked ham,
- 2 tablespoons of potato starch,
- 2 eggs,
- 120 grams of halloumi cheese,
- 1/3 cup chopped parsley.
Preparation:
Step 1. Peel the potatoes, cook them until tender, and mash into a smooth purée. Add eggs and potato starch, stirring thoroughly.
Step 2. To the potato mixture, add grated or very finely chopped ham, parsley, and crumbled halloumi cheese. Mix well.
Step 3. Transfer the mixture to a pastry bag. Squeeze portions of the dough into hot, deep oil, cutting off the ends with scissors. It resembles making small churros. Fry until they are golden brown.
Step 4. You can place the ready bites on a paper towel for a moment to remove excess oil. Serve with a favourite dip, like garlic sauce or sriracha mayo. Enjoy!
