Herring delights: A fresh twist with dill sauce
The season for enjoying herring with friends is quickly approaching. It's a time when we search for recipes featuring these delicious fish. Recently, I've been particularly enjoying herring paired with a green addition typically associated with potatoes and... sauce for meatballs. I've made this several times, and it never gets boring.
Dill sauce can be served with both meat and vegetarian dishes. It pairs excellently with a variety of dishes such as salads, eggs, pasta, or poultry. Dill sauce can be served warm or cold. In its chilled version, it complements herring wonderfully.

One way to make use of dill is to prepare herring with this recipe. They will be aromatic, with a fresh hint, and incredibly tasty. It's best to prepare them the day before so the flavours can meld. These herrings are perfect with bread.
herrings in dill sauce
Ingredients:
- 6 salted herring fillets,
- 2-3 pickles,
- 5 tablespoons sour cream,
- 4 tablespoons mayonnaise,
- 1 teaspoon mustard,
- 1 teaspoon lemon juice or wine vinegar,
- a few sprigs of fresh dill,
- pepper to taste.
Instructions:
- Soak the herring fillets (the time depends on their saltiness). Then pat them dry with paper towels and cut into strips.
- Dice the pickles finely.
- Finely chop the dill.
- Mix the mayonnaise with sour cream, mustard, lemon juice or wine vinegar, dill, and pepper.
- Add the sliced herring and pickles to the sauce and mix thoroughly.
- Transfer the herring to a jar or a closed container and place them in the refrigerator for a few hours.
