Homemade ice cream is often considered a healthier alternative to store-bought options. We can avoid artificial additives and preservatives, and adjust the flavour to our preferences. Furthermore, making it yourself is a straightforward process.

Ingredients for strawberry ice cream

To prepare strawberry ice cream, you will need a few basic ingredients:

  • 400 g of strawberries
  • 250 g of mascarpone cheese
  • 200 g of sweetened condensed milk

How to make strawberry ice cream with condensed milk? Begin by thoroughly washing and hulling the strawberries. Then, mash them in a bowl using a mortar and pestle or a fork. Add mascarpone cheese and condensed milk to the prepared strawberries, mixing everything thoroughly. The mixture may be lumpy, but this is not a problem.

Next, pour the mixture into a large container or smaller containers with sticks and place them in the freezer for about six hours. After this time, the ice cream is ready to serve. It can be served on its own or with the addition of fresh strawberries.

How to store homemade ice cream?

After making homemade ice cream, it’s crucial to store it properly. The ice cream should be placed in an airtight container to prevent it from absorbing freezer odours. Ideally, ice cream should be stored at a temperature between -12 and -20 degrees Celsius.

It is also important to remember that thawed ice cream should not be refrozen due to the risk of harmful microorganisms developing, which can result in foodborne illnesses such as salmonella.

Homemade strawberry ice cream can be stored in the freezer for about 1 to 2 months. However, it should be noted that the longer the ice cream is stored, the more likely it is to lose its creamy consistency and become more crystalline in texture. Therefore, it is best to consume it within a few days of preparation to enjoy the best taste and texture.
