Recipe for coleslaw with horseradish

Ingredients:

Slaw:

  • Half a head of white cabbage
  • One carrot
  • One medium onion (white or red)
  • One tablespoon of chopped parsley (can be dried)
  • One flat teaspoon of salt

Dressing:

                              
  • Two to three tablespoons of mayonnaise or plain yogurt
  • Two to three tablespoons of milk
  • One tablespoon of sugar
  • One tablespoon of white wine vinegar
  • Juice from half a lemon
  • One flat tablespoon of sharp horseradish
  • A pinch of freshly ground pepper

Preparation:

                      
  1. Finely shred the cabbage and place it in a large bowl, add salt, mix, and let stand for 10 minutes to soften.
  2. Grate the carrot using a coarse grater, dice the onion finely, and add the carrot, onion, and parsley to the cabbage.
  3. In a separate bowl, mix all the dressing ingredients (mayonnaise or yogurt, milk, sugar, vinegar, lemon juice, horseradish, and pepper) until smooth.
  4. Pour the dressing into the bowl with the vegetables and mix thoroughly to combine all the ingredients.
  5. Let it sit for at least 30 minutes in the refrigerator for the flavours to meld. Serve as a side dish to meats, fish, or grilled dishes.
