Indulge in homemade chocolate brioche bliss
These rolls are a delightful alternative to sweet buns that will please both young and old fans of sweets. No store-bought products can compare to them.
They are soft, fluffy, and have a wonderful buttery aroma. Each bite is filled with pieces of chocolate. They require no add-ons—just a glass of milk or a cup of hot coffee, and you'll be delighted. Even the smell alone will make your mouth water.
Milk rolls with chocolate
Buttery rolls with pieces of chocolate are available in many supermarkets. However, their ingredients leave much to be desired. You can easily make them at home. They turn out even tastier and richer in chocolate. Homemade brioche buns have a thin, golden crust hiding a fluffy interior. You can add milk, dark, or white chocolate to the dough. I suggest using a mix of different kinds. I also add vanilla seeds from a whole pod to the yeast dough, which enhances the flavour and aroma.
These rolls taste best when fresh or enjoyed the next day. Before serving, you can warm them slightly in the oven or air fryer to melt the chocolate.
Ingredients:
Starter
- 28 g yeast,
- 125 mL milk,
- 2 tablespoons sugar,
- 2 tablespoons all-purpose flour,
Dough
- 85 g sugar,
- 3 egg yolks,
- 1 egg,
- 100 g melted butter,
- 5-6 cups all-purpose flour,
- 150 mL milk,
- 140 g milk chocolate,
- 55 g white chocolate,
- 55 g dark chocolate,
- 1 vanilla pod,
- 1 egg yolk and 1 tablespoon milk for brushing.
Instructions:
- Crumble the yeast into a bowl, add sugar, warm milk, and flour, and mix thoroughly.
- Set the starter aside for 15 minutes to rise.
- Melt the butter for the dough and let it cool.
- Beat the yolks and egg into a fluffy, light mass along with the sugar.
- Add flour, melted butter, warm milk, vanilla seeds, and the prepared starter.
- Knead a smooth dough, slightly more fluid than traditional dough. This can be done by hand or using a kitchen mixer with dough hooks.
- Cover with a cloth and leave to rise for an hour.
- After this time, add diced chocolate and mix.
- Divide the dough into smaller portions and form balls.
- Place on a baking sheet lined with parchment paper, cover, and set aside for 20 minutes to rise.
- Brush the rolls with egg yolk mixed with a bit of milk.
- Place in an oven preheated to 175°C for about 20-25 minutes.
You can serve the ready rolls warm. Enjoy!
