Mardi Gras King Cake - what kind of cake is it and what is its tradition?

Mardi Gras King Cake, also known as the Epiphany Cake, is a unique pastry that has been present on tables during the celebrations on January 6th for centuries. The tradition of baking it dates back to the Middle Ages and is particularly popular in French-speaking countries and the southern United States, especially in New Orleans. It symbolizes the homage of the three wise men to the newborn Jesus.

A characteristic feature of the King Cake is its crown-like shape, decorated with colourful icing in shades of purple, green, and gold, which symbolize justice, faith, and power. Inside the cake, a small figurine - often in the form of a baby - is hidden, which is said to bring luck to the person who finds it, but also obligates them to organize the next celebration. A similar surprise can be found in another French cake for this holiday - the Galette des Rois.

Recipe for Epiphany Cake

Preparing the Epiphany Cake, also known as Mardi Gras King Cake, is not complicated but requires care to achieve the perfect result. Here is a tried and tested recipe for Epiphany Cake that will surprise your guests with both its taste and appearance.

Ingredients:

Cake:

  • 4 cups all-purpose flour,
  • 1/2 cup sugar,
  • 1/2 cup warm milk,
  • 2 eggs,
  • 5 tablespoons butter (melted),
  • 25 grams fresh yeast or 7 grams instant yeast,
  • a pinch of salt.

Filling (optional):

  • 100 grams cream cheese,
  • 1/4 cup powdered sugar,
  • 1 teaspoon cinnamon,
  • fruit jam or other favourite filling.

Decoration:

  • icing (powdered sugar + a little lemon juice),
  • food colouring: purple, green, gold,
  • sprinkles or sugar decorations.

Preparation:

  1. Yeast starter: In a small bowl, combine warm milk, yeast, and a tablespoon of sugar. Set aside for 10 minutes until it starts to activate.
  2. Cake mixture: In a large bowl, mix flour, sugar, and salt. Add eggs, yeast starter, and melted butter. Knead the dough for about 10 minutes until it becomes smooth and elastic. Leave it in a warm place for 1 hour to rise.
  3. Forming: Roll out the risen dough into a rectangle. Add filling if desired and roll into a log. Form a wreath shape by connecting the ends of the dough. Place on a baking sheet lined with parchment paper and leave to rise for another 30 minutes.
  4. Baking: Bake at 180°C for 25-30 minutes until it turns golden. Once cooled, decorate with icing and colourful food colouring, creating the characteristic stripes.
