Coffee cake – a recipe that always succeeds

Coffee cake is an excellent choice for any occasion. It works both as a dessert for afternoon coffee and as a sweet treat for guests. Its preparation is extremely simple and does not require special culinary skills. Just beat eggs with sugar, add oil, brewed coffee, and flour with baking powder. Mix everything and bake in the oven. The result? A fluffy, aromatic cake with an intense coffee flavour.

Cake:

  • 2.5 teaspoons of instant coffee or a cup of espresso,
  • 5 eggs,
  • 2/3 cup of fine sugar (about 115 grams),
  • 2/3 cup of vegetable oil or melted butter (about 145 millilitres),
  • 1/3 cup of water (about 80 millilitres),
  • 1 and 1/2 cups of all-purpose flour (about 240 grams),
  • 2 teaspoons of baking powder,
  • optional: 3 tablespoons of chopped nuts, almonds, or raisins + 1 tablespoon for sprinkling.

Coffee Icing:

  • 1 cup of powdered sugar (about 130 grams),
  • 1 tablespoon of instant coffee,
  • 1 tablespoon of water (about 15 millilitres).

How to prepare coffee cake step by step

  1. Start by preparing the baking pan (approximately 13 x 25 cm). Line it with damp and crumpled parchment paper to help fit it to the pan.
  2. Preheat the oven to 340°F (170°C) using the top-bottom function.
  3. Dissolve the instant coffee or Inka in a small cup of boiling water. Allow it to cool.
  4. In a large bowl, beat the eggs with sugar into a fluffy, light mass. This process takes about 6 minutes.
  5. In a thin stream, pour oil and cooled coffee into the beaten eggs, mixing gently.
  6. In a separate bowl, combine the flour with the baking powder, then gradually add it to the egg mixture, mixing with a spoon or mixer on low speed.
  7. Pour the prepared batter into the pan and immediately place it in the preheated oven.
  8. Bake for about 45 minutes. Check with a toothpick – it should be slightly moist but without raw batter.
  9. After baking, remove the cake from the oven and cool it on a rack.

The baked coffee cake is characterized by its fluffy texture and intense coffee aroma. You can serve it on its own or drizzle it with coffee icing, made from powdered sugar, instant coffee, and water. Coffee cake tastes great with the addition of nuts, almonds, or raisins.
