Preparing the perfect juicy and tender chicken breast in the oven is, for many, a culinary challenge. Often, it ends up dry and tough, discouraging healthy cooking. However, I have discovered a simple method that ensures it is always perfect. The key to success is precisely determining the correct temperature to bake the chicken breast, so it retains its moisture and tenderness.

A too-dry chicken breast is a common issue for many home cooks. I also experimented with baking temperatures for years until I finally discovered a method that guarantees the perfect result every time. If you're wondering at what temperature to bake a chicken breast so that it's soft, juicy, and full of flavour, I have a tried-and-true recipe for you.

At what temperature should you bake a chicken breast so it won't be dry?

The secret lies not only in the marinade but primarily in the temperature and method of baking. For a long time, I made the same mistake—baking the meat too long and at too high a temperature, which dried the breast. Today, I know the best results are achieved by baking at 175°C for 40–45 minutes—preferably in an oven bag or covered, so the meat retains its moisture.

In my experience, oven bags are a reliable way to get juicy fillets. Thanks to them, the chicken breast stews in its own juices, retaining its valuable aromas. If you bake without a bag, cover the meat with aluminum foil for at least the first 30 minutes of baking.

Ingredients for an aromatic oven-baked chicken breast

Before we move on to the recipe itself, here's a list of what you'll need. This is my favourite spice combination—it gives the meat a deep flavour and a beautiful golden colour.

Ingredients:

  • 2 chicken breast fillets,
  • 2 tablespoons olive oil,
  • 1 teaspoon sweet paprika,
  • 1/3 teaspoon thyme,
  • 1/3 teaspoon ground black pepper,
  • 2 tablespoons "golden crust" seasoning for chicken,
  • A pinch of curry,
  • 1/3 teaspoon dried lovage.

Preparation:

  1. Thoroughly wash the fillets, removing membranes and bones, and pat them dry with a paper towel. Each fillet is cut lengthwise in half to marinate better.
  2. In a small bowl, combine the olive oil with the spices and mix thoroughly. Then rub the mixture on the meat on both sides. Place the fillets in the fridge for at least an hour, but they taste best when marinated all night.
  3. Place the marinated fillets in an oven bag. Preheat the oven to 175°C and bake the meat for about 40–45 minutes. Do not open the oven during this time; let the magic happen inside.
  4. After baking, remove the meat from the bag, let it rest for 5 minutes, and then slice it. Chicken breast tastes great with roasted vegetables, rice, or as an addition to a salad. It can also be drizzled with a light gravy.

Preparing this dish does not require exceptional culinary skills. It's an ideal recipe for a quick dinner or supper or as a base for a healthy lunchbox. Thanks to the appropriately chosen baking temperature, you can be sure that your chicken breast will always turn out great.
