It combines juicy citrus, pears' sweetness, rice delicacy, and a creamy consistency thanks to the egg yolks. It's an excellent choice for warmer days – light, refreshing, and versatile, as it tastes great both warm and chilled, served almost like a dessert. Orange soup recipe
Orange soup is an unusual combination of flavours that surprises from the very first spoonful. Citrus adds freshness, pears sweetness, and the creamy base makes the dish exceptionally smooth and pleasing.
- 5 pears,
- 6 oranges,
- 1 lemon,
- 4 egg yolks,
- 2 tablespoons of sugar,
- 100 grams of long-grain rice
Preparation:
- Peel the pears, cut them into cubes, and cover them with about 1 litre of water. Cook with sugar until the pears are soft, then add rice and cook until the rice is soft but not overcooked.
- Meanwhile, squeeze the juice from the oranges and lemon. Once the rice is ready, pour the juice into the pot and stir. Remove from heat.
- In a separate bowl, whisk the egg yolks. Add a few tablespoons of hot soup to the yolks, mix energetically, and then slowly pour back into the pot, stirring constantly (the soup should not boil).
- The soup can be served immediately – warm – or after chilling, as a cold dessert version.
Citrus and pears – a duo full of value
Although fruit soup may primarily be associated with dessert, its ingredients are a true source of valuable nutrients.
