Recipe for pistachio pâté
Pistachio pâté is a dish that lingers in memory for a long time. Tender meat, aromatic spices, and crunchy pistachios create a harmonious combination that is hard to resist. Ideal for holiday parties and family gatherings, it will serve as both a table decoration and a point of pride for the host.
Ingredients:
- 450 grams of turkey or chicken meat,
- 280 grams of poultry liver,
- 1 onion,
- 2 cloves of garlic,
- 2 eggs,
- 100 millilitres of heavy cream,
- 55 grams pistachios,
- salt and pepper,
- nutmeg,
- 1 tablespoon of butter,
- 2 tablespoons of olive oil,
- 1 tablespoon of flour,
- 1 bay leaf.
Preparation:
- Heat the butter and olive oil in a pan, sauté the onion and garlic until golden brown. Add the liver and cook for a few minutes, then set aside to cool.
- Grind the poultry meat and sautéed liver in a meat grinder. Transfer to a bowl and add the eggs, cream, salt, pepper, and nutmeg, mixing thoroughly.
- Add chopped pistachios to the mixture, leaving a few whole ones for decoration. Grease the baking pan with butter and sprinkle with flour.
- Transfer the mixture to the pan and smooth the top. Arrange the remaining pistachios on top and bake in an oven preheated to 180°C (355°F) for about 40 minutes.
