When the thermometer mercilessly indicates that spring is still a long way off, a serving of hot soup hits the spot. Instead of cooking cucumber, tomato, krupnik, or goulash soup once again, opt for an unusual pizza soup. The very name sparks the imagination and intrigues even picky eaters about what's in their bowl.

If you thought that soup couldn't fill you up, this recipe will quickly prove you wrong. Pizza soup not only warms you on a cold day but also silences persistent stomach growling. There's a lot going on inside—it contains ground meat, mushrooms, and onions. The addition of cream cheese makes it creamy and delicate.

This soup is a deconstruction of pizza, full of flavour and aroma. After a serving of this deliciousness, no one will be asking when the second course will be ready.

Ingredients:

  • 600 g ground meat,
  • 500 g mushrooms,
  • 3 onions,
  • Green or black olives without pits (optional),
  • 2 cans of chopped tomatoes,
  • 150 g cream cheese,
  • 1 teaspoon dried oregano,
  • 1 teaspoon dried basil,
  • 1.5 litres of chicken broth,
  • 200 mL cream,
  • Salt, pepper, and chilli to taste,
  • Grated Parmesan or Grana Padano,
  • Oil.

Instructions:

  1. Heat oil in a pot and sauté the meat.
  2. Chop the onions and mushrooms into small cubes and add to the sautéed meat.
  3. Sauté everything for a few minutes until the mushrooms shrink and the onions become translucent. Add the chopped olives.
  4. Pour in the chicken broth, and add oregano, basil, salt, pepper, and a touch of chilli.
  5. Cook for 30 minutes.
  6. Then add the chopped tomatoes and diced cream cheese.
  7. Mix thoroughly and bring to a boil.
  8. Take a portion of the broth and mix it with the cream. After tempering, pour it back into the pot.
  9. Season the entire dish to taste.

Serve the finished soup in deep bowls and sprinkle with Parmesan. You can also use grated mozzarella. Enjoy!
