Savour summer: Transform strawberries into airy mousse
When strawberries show up in stores, it's time to create a dessert. Instead of blending them into a smoothie, I transform them into a delicious foam.
Strawberries captivate with their sweetness, allure with their scent, and evoke memories of summer. The season typically begins in May and continues until July, so it's wise to make the most of it. The first baskets are already appearing at market stalls, and as the weeks pass, more will arrive. This increase will cause prices to drop, allowing you to enjoy them without being too concerned about costs. I convert strawberries into a fluffy mousse that charms with its delicacy. It's a superb alternative to a dense mousse or a labor-intensive cake.
Strawberry mousse
This dessert marries the fruity and vibrant flavour of strawberry mousse with the lightness of whipped cream. It's all enhanced by an extra serving of fresh strawberries, which serve as a delectable garnish. The preparation is quick, allowing you to savour the taste of summer captured in a cup in no time.
Vegetarians and vegans can replace gelatin with agar. For 1 teaspoon of gelatin, typically 0.5 to 2 teaspoons of agar are used. It's essential to remember that agar sets even faster, so mixing needs to be done quickly. However, it's a good gelatin substitute, offering a very neutral taste and smell.
Ingredients:
- About 454 grams of fresh strawberries,
- 3-4 tablespoons of powdered sugar,
- 1 teaspoon of lemon juice,
- 311 millilitres of chilled heavy cream,
- 1 teaspoon of gelatin,
- 2 tablespoons of water.
Preparation method:
- Wash the strawberries, remove the stems, and set aside to drain.
- Blend them and press through a sieve to remove seeds. If the consistency with tiny pieces doesn’t bother you, you can skip the sieving.
- Dissolve the gelatin in cold water and let it stand for a few minutes to swell.
- Then heat it until dissolved.
- Whip the cream till stiff along with the powdered sugar.
- Add a few tablespoons of the strawberry puree to the dissolved and cooled gelatin and mix.
- Pour the gelatin into the remaining strawberries, mix, and then add to the whipped cream.
- Gently combine the ingredients and transfer them to glass cups or glasses.
- Place in the refrigerator for a few hours to set.
Decorate the finished dessert with fresh strawberries. You can also add a dollop of whipped cream or pair the strawberry mousse with a chocolate mousse. Enjoy!
