Sweet potato cake: A deliciously moist superfood bake

In the summer, zucchini is popular in desserts. Many have discovered that beets work great in brownies. Another vegetable that shines in sweet dishes is the sweet potato.

We use sweet potatoes in salads, soups, and stews. Sweet potato fries are also very popular. They are suitable for baking, boiling, and frying.

Notably, they contain vitamins A and C, which boost immunity, and potassium, which positively impacts blood pressure. They also provide minerals like calcium, magnesium, and iron. Sweet potatoes aid in intestinal health, regulate digestive processes, and are excellent for weight-loss diets because they are low in calories and provide a long-lasting feeling of fullness.
Trick for a moist cake
Why should you bake a cake with sweet potatoes? During baking, sweet potatoes maintain their valuable properties and offer a unique flavour. They pair perfectly with nuts, raisins, or cranberries. Cinnamon is the perfect spice for sweet potatoes. They also add moisture, so the cake remains fresh even after a few days. You can also prepare a chocolate glaze for such a cake.
Sweet potato cake
Ingredients:
- 2 cups grated sweet potatoes,
- 4 eggs,
- half a cup of sugar, preferably brown,
- 1 cup oil,
- 2 cups flour,
- 1 teaspoon baking powder,
- 1 teaspoon baking soda,
- cinnamon to taste,
- cardamom to taste, optionally,
- cranberries to taste, optionally,
- your favourite nuts to taste, optionally.
Method:
- Mix the eggs with sugar into a fluffy consistency using a mixer. Slowly add the oil while continuing to mix.
- Add the flour mixed with baking powder and baking soda. Then add the grated sweet potatoes along with your chosen additives and cinnamon. Gently mix the batter.
- Pour the mixture into a baking tray lined with parchment paper.
- Bake the cake for about an hour at a temperature of 160 degrees Celsius.
